I have written a letter to the editor in reaction to a statement made by a gastroenterologist from the University of Otago.
While I know little about the science behind this debilitating condition, I find the obscuring of truth about the effect of food on our health to be obscene behaviour. It is well past time that we saw animal proteins and fats for what they are - dangerous to our health.

In the article “Gut Reaction”, Dr Michael Schultz is quoted as saying that "the growing incidence of IDB can’t be explained by genetics alone - so that indicates that the environment is playing a role”.
What a dreadful euphemism to use, when the ‘environment’ is primarily the FOOD WE EAT.
It is most improbable that any other part of our environment is a cause, not the air we breathe, the seats we sit in nor the land we walk over. On the other hand there are numerous studies that indicate that our extreme consumption of meat and milk products is the prime cause of IDB and most of the other auto immune diseases we suffer from so excessively.
