Curry base sauce
This is an excellent base to use and keep adding to many dishes, either as a full curry, or just as a bit of flavouring.

- 1 cup dried red lentils (or split peas)
- About 1 cup water
- 1 tsp ground or grated ginger
- ¼ tsp chilli powder or 1 fresh chilli chopped (more if you want it spicier than mild)
- 2 tbsp Aromatic mix
- ½ Tbsp. cinnamon
- 1 tsp paprika
- ½ tsp turmeric
- 1 Tbsp. garam masala
- 1 onion, large diced
- 1 large carrot, large diced
- red pepper, deseeded, quartered
- 4 cloves garlic, peeled and crushed
- Cooked lentils and their water
- Tin of tomatoes (chopped or puree), or 400g fresh tomatoes, chopped
- about 200ml cashew cream
- salt to taste
