Mushrooms and Spinach
I make this, or variations of it, for breakfast every morning to serve with whole grain toast, as a follow up after porridge.
Saute in water, maintaining sufficient to just cover the pan base, for 5 - 10 minutes

- 1 cup chopped mushrooms
- 1 handful chopped spinach (or any other similar green)
- Chilli sauce
- Soy sauce
- Lemon juice
- Salt and pepper
