Black Bean Soup
Sauté over high heat until translucent
Mix puree back in with soup. Garnish with
- ½ small onion, chopped
- 1 ½ teaspoon chili powder,
- 1 teaspoon ground cumin
- 2 cups cooked black beans, drained or rinsed (or a can of precooked black beans, drained or rinsed )
- 1 ½ cup vegetable broth
- ¼ cup prepared salsa
- 1 ½ teaspoon lime juice
Mix puree back in with soup. Garnish with
- 2 tablespoons fresh coriander , chopped
- 1–2 spring onions, sliced
- Corn chips, crumbled
