Potato Rösti
Traditionally Rösti is fried in a hot pan with butter and lard, however the following Rösti is nothing but potatoes and optionally onion.
Par boil for around 10 minutes, then drain and place in the fridge for 6 – 12 hours
Grate
Take out of oven, place a plate on top and flip the combination upside down. Remove the flan dish surround, then carefully release the base from the mixture. Assemble the dish and base and slide the mixture back in to the dish, so that the base of the mixture is now facing up.
Place in oven for a further 30 minutes.
Using the same procedure as above, disassemble the flan dish and let the Rösti stand.
Serve alone, with a salad, or any cooked or raw vegetables.

- 5 large potatoes
Grate
- the cold potatoes
- 1 onion (optional)
- salt and pepper
- 25cm flan dish, with a removable base.

Place in oven for a further 30 minutes.
