Beans and lentils
If we eat enough spuds and veges, I don’t think there is a big need for us to depend on these for much more than variety, but they are a good source of starch and a tasty addition to the plate.
Try red lentils in soup, they cook quickly and make it a nice colour.
Put beans in salads.
Hummus works well as mayonnaise, as a sandwich spread or a dip for vegetables and crackers.
