Tortilla and Twice Fried Beans

Mix by hand, until dough becomes easily formed into balls, an equal weight of 
  • Masa de Maiz (2 cups)
  • Water (250ml)
Roll into balls of approximately 50gm, and put aside under a wet towel.

Using a tortilla press, place baking paper, or plastic on the base of the press, a ball in the centre and another sheet on top.  Close and press down to form a tortilla of between 12 and 18cm.  The pressed tortilla should be no more than 2ml thick.

On a medium heated dry hot plate partially cook one side of the tortilla, then lift it with a spatula and turn it over.  Repeat when the second side is nicely browned.  Turn the tortilla over again, place spread twice fried beans, (canned or self prepared), or any fill of your choice, on half the tortilla and fold over the other half.  Continue cooking on both sides for a short time.

Serve with salad, Riata, chutney or any other condiment.

Twice fried beans 
Soak beans, red, black or kidney, for some hours, then cook in fresh water for two hours.  When they have cooled somewhat place the drained beans in a blender, along with Jalapeño Peppers, or chillies, and salt to taste. Blend to a paste, adding the bean liquid as required.
