Thai pumpkin and coconut soup
Prepare and bring to the boil
Adding soy sauce, if not salty or flavourful enough. Add lime juice if too salty or sweet. Adjusts for sweetness and heat with sugar, chili sauce or cashew cream.
Just before serving add
- 6 cups good-tasting faux chicken or vegetable stock
- 4 Tbsp. minced lemon grass)
- 3 kaffir lime leaves
- ½ cup red onion grated
- 3 cloves garlic, chopped
- 1 thumb-size piece ginger grated
- 2 fresh red chilies or equivalent sliced
- 3 cups pumpkin cut into chunks
- 2 cups yam, peeled and cut into chunks
- ½ tsp. turmeric
- ½ tsp. regular chili powder
- 2 tsp aromatic mix
- 3-4 Tbsp. soy sauce, to taste
- 1 tsp. brown sugar
- 2 Tbsp. fresh-squeezed lime juice
- 1 cup cashew cream

- 1-2 generous handfuls baby spinach, washed
- 1-2 cups soft tofu, sliced into cubes, OR substitute chickpeas
