Fresh Salads
Without some substance from starch components, salads are not ideal for feeding a hungry vegan. We try for a minimum of 12 elements.

- Lettuce, (multiple varieties), freshly picked and torn
- Cabbage, silver beat and any other green freshly picked and torn.
- Tomatoes, chopped
- Carrot, sliced or grated
- Red onion, sliced or chopped
- Red and green peppers, chopped
- Cucumber, sliced
- Celery, sliced
- Radish, sliced
- Cold cooked and sliced beetroot
- Snap peas, snapped
- Beans, cooked and cold
- Walnuts, pine nuts, almonds chopped etc
- Pumpkin seeds, Sunflower seeds
- Olives, halved
- Currants
- Chopped parsley, chives and other herbs
- Hot or cold small portions of roast potato
- Chopped and steamed kumera tossed with orange pieces and the juice of one lemon, before being tossed with the rest.
- Crushed Garlic
- Grapefruit juice as a dressing. Alternatively use lemon juice, balsamic vinegar or white wine
