Quinoa Timbales with Currants and Pine Nuts  

This really works and makes an interesting accompaniment to other dishes. 
Rinse and cook
¼ c quinoa.
Salt and pepper
Sauté 
1 red onion finely diced
1 tsp Aromatic mix
¼ tsp ginger, coriander and turmeric
¼ tsp turmeric
Add and toss
Cooked quinoa
¼ c chopped parsley
¼ c currants
3 Tbsp. pine nuts or almonds toasted and chopped
1 tsp grated orange or lemon rind.
 
Pack servings of the mixture into timbale moulds, cups, or ramekins then immediately turn out onto individual plates.
