Cashew Cream

This is a good alternative to coconut cream, and even cream, enhancing both savoury and dessert dishes.  

Many vegan recipes include the use of Cashew Nut Cream, without the potato, but I have found that the adding of potatoes at around a 50/50 mix, adds to the consistency and flavour of the ultimate cream.  

Blend until very creamy

•             1 cup cashew nuts, previously soaked (12 - 24 hours) and rinsed.

•             1 large potato, previously boiled and drained.

•             2 cups water.

Store in refrigerator or freeze in ice blocks for future use.

Now that I know the prime causes of an early demise, it beggars belief that we make so little effort to avoid our premature deaths.  

It seems that the reason is no different than when we smoked; the power of corporate induced addiction was very hard to beat.  

Our addiction to animal products has been established from a life-time of ingestion; parentaly initiated, farmer encouraged and corporately persuaded with much of the medical fraternity in the same mendacious loop.

When I speak of the life prolonging features of a vegan diet, I am either scoffed at or ignored; seldom do I hear any reasonable argument for a carnist diet. 

I must regretfully accept, as I watch people eating themselves to an early death, that the marketing efforts of those who benefit from selling animal products, or fixing those that eat them, are working exceptionally well.

But I will continue to speak; I feel so good!

With 2008 deaths from prescribed medicines reaching 41,000 in USA, dying from this affliction has now over-taken automobiles as the country’s number one killer. 

Most Americans are now taking some form of life-time medication, resulting in either a direct death, through bad prescribing, or an untimely death through masked symptoms.

The desirable paradigm shift is to stop taking those foods which aggravate ill health.  This approach achieves a more effective, curative and long term preventative result, while saving money, saving the planet and depriving corporates of their obscene profits, .

No one has ever died from becoming a vegan.

Chilly, cabbage and corn

Here is a favourite of ours, based on a prawn dish we used to enjoy, but which we think is even nicer now.

Saute till clear
•             2 chopped onions
Add and sauté till well cooked, adding stock as required
•             6 mushrooms chopped
•             3 cloves garlic chopped
•             Thumb size ginger chopped
Add and continue to sauté
•             2 or 3 chillies, or their equivalent in paste, to your taste.
Add and continue to sauté
•             4 cups cabbage roughly chopped
•             2 cups corn kernels
•             3 tps capers
Add and heat
•             Up to 2 cups cashew cream
•             Salt and pepper to taste.
Serve with rice.

Life expectancy of today’s youth.

Over the past few centuries the life expectancy of humans has grown significantly, due mostly to developments in personal and public health.  There has been a huge decrease in deaths between birth and 50 years, however life expectancy from age 50 to death has remained relatively static.

There seems to be little concern for this as we are duped into believing that science will step in and make improvements for us.  However science is yet to discover cures for the multiple of chronic diseases which play such a role in prematurely ending the lives of the aging. 

There is positive scientific proof that most chronic diseases are caused through a lifetime of ingesting animal fats and proteins and processed foods.  Obesity is the first and most obvious symptom; however heart disease, cancer, dementia, rheumatism, diabetes, MS and the many other non communicable diseases of the West all have their roots in youthful eating of the killer foods.

So long as we continue with the corporate driven mantra that milk and meat are good for growing children, and it is acceptable to offer them processed foods, we are committing these children to a shortened life, as if we were encouraging them to smoke and drink from an early age.

For those of us responsible for raising the young, we must recognise that the only way we can assure them a long and disease free life is to serve them a plant based, whole food diet. 

For those of us who have made 50, we must recognise that the only safe way to avoid our premature death from a chronic disease is to eat a plant based, whole food diet. 

Science will not undo what the food related industries have profitably put in place.  Without a paradigm shift in food choices our youth are condemned to an early death.

The Internet is awash with recipes and good vegan ones are easily found or adapted from others. Don't be afraid to modify them to suit your taste, or your part of the world.  Save those that appeal and work for you; repeat them a few times to become comfortable with the new cooking regime.

Avoid triggering the old meat or cheese desires by avoiding faux milk, meat or cheese dishes.

Make full use of seasonings, if there is a choice between not eating enough and using salt as an appetite stimulant, choose salt; much of the bad wrap for salt comes from its association with bad food.

Environmentally speaking, vegetable food miles from anywhere, are not as costly as locally grown meat.  Given that a whole-food, plant-based diet defends us from so many threatening diseases, the origin of the food is not so important. 

Stick to a whole-food, plant-based diet for health and wellbeing, for weight loss and strength.  Remember that all animals source their energy and growth from plants, either directly or through eating animals who have derived their energy and growth from plants.  Humans are one of the former group; we developed not from successful hunters but from successful gatherers and cooks of seeds and plants.

I know that you think you have heard it all before, but it is so important that you come to understand how essential it is for us all to go vegan.  

After all none of us want to die early; none of us want to suffer from a stroke, let alone cancer and so many other afflictions that threaten to overwhelm us or our children.
